Ripe puerh tea is a category of tea that is fermented during the production process. This wet piling fermentation (wo dui) was successfully produced in the 1970s by Lu Zhuxun. Tea leaves stacked and spring water is sprinked on them, creating a humid and warm environment for fermentation to take place. This process takes about 45 days to complete. 

 

As ripe puerh has undergone fermentation, much of the bitterness and astringency has disappeared, giving it a velvety smooth taste with a delightful sweet finish, reminiscent of jujube.

 

These ripe puerh balls are easy to brew - just throw it into a big pot and it can be steeped more than ten times!
