Golden Tie Guan Yin (also known as Jin Guanyin) is a hybrid between the classic Tie Guan Yin plant and Huang Jin Gui, a newer breed. While the latter is commonly used as a substitute for authentic Tie Guan Yin due to its sweet fragrance, it lacks the depth of the original. The resulting hybrid, however, combines the finest of both parents. This is a lovely floral-style Golden Tie Guan Yin with a subtle grassy flavour. In our taste test, we were pleasantly surprised by the vivid floral scents of osmanthus and jasmine. The flavour profile featured a smooth creamy mouthfeel with a cooling finish. Notably, the flavours remained well-balanced and did not become herbaceous even after several steeps.
The outer edge where oxidation begins is carefully ripped off by hand before the leaves are tightly wrapped into semi-balls. This time-consuming and arduous technique is skipped in both commercial productions and imitations. Skipping this process will affect the overall taste quality of the tea, resulting in astringency. The 'broken' edges is one of the indications of a properly processed Tie Guan Yin.
